THIRTEEN OLIVES PURE HEALTH SAVORY Roasted Acorn Squash 1 Acorn Squash 1 Granny Smith Apple ½ C Walnuts 1/2 C Dark Cherry Balsamic Halve the squash cutting horizontally, shave a small slice off of each of the halves at the base to keep it laying flat, remove the seeds. Fill the squash cavity with apple slices, walnuts and balsamic. Cover with foil and place on a sheet tray. Bake at 350 degrees for 45 minutes or until the squash is tender. If a pairing knife can be easily inserted, the squash is tender, remove foil and bake for an additional 5 minutes at 400 to toast the walnuts. Serve whole on a platter as a side dish in the fall and winter.
